Jamie Oliver is one of my favourite celebrity chefs. Mostly because he has complete faith that even people with two left hand like me should be allowed in the kitchen.
His recipes are simple (yay), sometimes healthy (yay) and most importantly delicious (YAY!).
If you’ve followed this blog for a while you know I refuse to make anything that is not quick and easy, the batch being that it has to be delicious as well. Double points if it’s healthy because we all need to eat better but let’s not deprive ourselves from the joy that is life.
Like these biscuits which are not even a little bit healthy but probably from heaven.
Anyway, Jamie is big on getting the way kids eat to change and it starts at home. Basically involve your kids in the cooking process and teach them that healthy doesn’t need to mean tasteless, boring food.
Last year we celebrated by making these Cheesy Broccoli Bites, still one of my favourite things to make with broccoli and you can add other veggies as well. It’s also great for baby-led weaning.
This year, we’re going “sweet” and while there may be sugar in this recipe you can easily substitute it for another type of sweetener.
Also, we got a while bunch of dried cranberries from Ocean Spray that I wanted to do something with besides throw into the endless pit that is my stomach lately.
Another reason I chose these muffins is that we’re constantly looking for snacks to put in The Munchkin’s lunch box and they’ll make a good addition because he thinks it’s cake but it’s not.
This recipe comes from one of my go-to healthy kind recipes sites, Super Healthy Kids.
- 1/2 cup orange juice
- 1/2 cup low-fat milk
- 1/4 cup canola oil
- 1 TBL grated orange peel
- 2 egg whites
- 1 cup white flour
- 1 cup whole wheat flour
- 1/3 cup sugar
- 1 TBL baking powder
- 1/2 tsp. salt
- 1 cup fresh cranberries, chopped.
- Mix wet ingredients in a large measuring jug.
- Mix dry ingredients in a bowl.
- Fold wet ingredients into dry ingredients.
- Top with sugar (optional)
- Dried cranberries can be substituted.
